As many cooks know, soup is something you can play with....you can make it your own by adding those little leftovers you have in your fridge, frozen vegetables, or a can of tomatoes.
"Chicken Little's Noodle Soup": we use organic gluten free corn pasta. For those curry lovers (me:) add 1&1/2 tbsp curry and 1 tsp of ginger to the pot as you are cooking the base. When you add the noodles also add 1 can of coconut milk....delicious
" Mulligatawny Soup" is a delicious "southeast Asian" soup with delicious contrasting bursts of flavour. A lovely addition is a 1/4 cup of currants. One of the optional additions on the label is Tamarind concentrate as. This spice can be located in the Asian aisle of some stores or at some Asian grocery stores. It is the primary spice flavour in Worcestershire. Please note some of the Worcestershire sauce brands contain wheat and salt plus many other unwanted items so read your labels!
"Coconut Curry Lentil Soup" delicious with roasted yams/sweet potato or carrots. Other optional additions: coconut cream (for extra creaminess), chickpeas, green peas. Puree for a fantastic sauce to use over, rice, quinoa or pasta. Steep the water with lemongrass, then cook the soup package in the lemongrass water and add a squirt of lime.
"Nonna's Minestrone Soup": add cabbage, spinach, swiss chard or kale and 1/4 tsp fennel (great Tuscan flavour).
"Mexican Taco Soup": Leftovers will be thicken in the fridge and are delicious stuffed in a wrap with lettuce, tomato, avocado, and salsa. Add some guacamole and eat this one with chips as a dip! Or spread over baguette bread and bake in the oven. Also great over greens as a taco salad.
"'Smoky Black Bean and Quinoa Chili": Try adding sweet potatoes, squash or a tin of pumpkin for extra goodness:)
"Chowder Lovers Chowder": A great chowder base. You can make it so many ways. Add a milk of choice and a can of creamed corn, or broccoli and Cauliflower and puree, leeks and potatoes, add tomato juice or a tin of tomatoes for a Manhattan style chowder.
***** 2017 Culinary Soup of the year... DILL PICKLE SOUP!!!! Add 1 cup of dill pickle juice and 1 cup (or as much as you like) of chopped dill pickles to our ''Chowder Lovers Chowder''. Soooo good!
"Wild Mushroom and Rice Soup": a delicious earthy wild mushroom soup with' morel, lobster mushrooms, chanterelle, oyster, shiitake, porcini, and cauliflower mushrooms.' Fantastic with extra mushrooms and served over pasta.
