Cran-Tastic Risotto (Cranberry, pumpkin pie, sweet potato) Vegan/ gluten free, reduced sodium
Ingredients: Arborio rice, cranberries (cranberries, cane sugar, sunflower oil), sweet potato flour, dehydrated veggie (potato, leek, carrots, cabbage, red/green peppers, onion, sulphites), onion flakes, plant based stock, parsley, pumpkin pie spice, thyme, pepper.

Vegan/Gluten Free/reduced sodium
Add contents of package to 3 cups of liquid (1.5 cups water & 1.5 cups coconut milk, could use milk of choice) and 1Tsp olive oil. Bring to a boil then simmer uncovered for 25 mins (stirring every 5 mins!). OPTIONAL additions: 1/2 cup of white wine as part of 3 cups of liquid. Last 5 mins can add 1/2 a can of pumpkin or squash, and or chopped apple &/or walnuts. Stir and Enjoy SALT TO TASTE
